| The objective is to analyze characteristic aspects of different structures of Agricultural Extension (ATER), represented by the Institute of Agricultural Extension (EMATER-RN), and by the Dom Helder Câmara Project (PDHC) in agrarian reform settlements in the Territory of Citizenship Sertão do Apodi, in state of the Rio Grande do Norte, Brazil. The focus group technique was applied, as a qualitative research tool with full commitment to the comprehensive meta-scientific perspective. | The exodus of young people from the countryside has been occurring very frequently in the search for improvements related to financial, work and education aspects. In this context, the empirical production of research data was carried out in the community of Riacho do Meio in Choró, Ceará, in which rural young people develop activities in a mini sesame processing factory (Sesamum indicum) seeking to generate employment and income, enabling the young people stay in the community. | Este trabalho é um conjunto de procedimentos sistematizados e padronizados para obter dados e informações capaz de caracterizar áreas de atuação de projetos de pesquisa ou ações da assistência técnica e extensão rural, onde a caprinocultura leiteira se apresenta como componente frequentemente encontrado em propriedades da agricultura familiar.
